Citrus Salad Dressing


1/2 cup olive oil

1/2 cup citrus (about 3 lemons and 1/2 orange)

1 shallot finely chopped

1 tsp salt

2 tsp honey

Combine all ingredients in a jar with lid and shake well. Refrigerate until ready to use. The oil will solidify once it gets cold, so pull the dressing out a little early so the oil has time to liquefy.

I love this dressing on butter leaf lettuce, avocado and orange segments.
