Dragon Fruit Chia Pudding

1 can of coconut milk

2 cups Ripple (plant-based milk substitute). Any milk will work.

1/2 tsp vanilla

2 Tb maple syrup

1 packet frozen dragon fruit puree

1/2 cup + 2 Tb chia seeds

Blend coconut milk, Ripple, vanilla, syrup and dragon fruit in a blender until thoroughly mixed.  Stir in chia seeds and refrigerate.  

May be divided into small containers.  

Stir pudding a couple times within the first hour of refrigeration in order to prevent clumping.  Let sit overnight.
